Preheat the oven to 250°F and line a baking sheet with parchment.
In a very large bowl, combine the oats, coconut, wheat germ, nuts, and seeds. Mix.
In another bowl, whisk together the oil, maple syrup, vanilla and salt.
Pour the wet ingredients over the dry mixture in the bowl, stirring and tossing until everything is very well combined.
Spread the granola on the baking sheet
Bake the granola for about 80 minutes (depending on your oven) and stir it every 10 or 15 minutes.
Your granola is ready when it is golden brown. Remove from the oven and let cool completely before storing in a tightly closed container.
