Here is a very easy recipe for you of Chicken with Olive Tapenade. A flavorful dish with a minimum of preparation and ingredients.
You can find the recipe to make your own tapenade on my Instagram posts, or you can use store bought Tapenade. However, I’d always recommend you make your own. It is very quick and way better.
I love chicken because of all the way possible you can cook it. This Chicken with olive tapenade is really a nice change to the traditional oven baked chicken legs. The Tapenade add a nice little twist. You can add more or less, depending on what you like.
You only need three ingredients: chicken legs, Tapenade and rosemary. That’s it!
Do littles cuts on your chicken before spreading the Tapenade. This will help get all the flavor in the meat.
Bake for one hour and you’re ready!
This is really a nice diner option if you have kids for example. It takes literally less than 15 minutes to get everything ready and then you can use the one hour cooking time to get their bath done, homework etc.
For a side, you can just throw some potatoes on the dish with olives oil, rosemary salt and pepper. They will be ready at the same time as the chicken. The rosemary will be crispy, almost like tiny chips of rosemary, I love it.

Chicken with Olive Tapenade
- 4 chicken legs whole
- 4 tbsp black olive tapenade
- Fresh rosemary
- With a small knife, make little cuts on your chicken tights and place them on an oven baking sheet.
- Spread 1 tbsp of tapenade on each leg.
- Sprinkle with fresh rosemary.
- Bake for one hour at 180C (356F).
